I’m always looking for some foodie inspiration to avoid getting in a #stirfryrut. Celebrity vegans and clean eating connoisseurs often have great recipes in their arsenals because they hang around cool chefs (see Ellen, below) and are sometimes in touch with some of the latest wellness trends (case and point—GP’s insane smoothie!). The following are a few delicious Peaceful Dumpling-approved celeb vegan recipes—plus actual Peaceful Dumpling recipes to double the fun 😉
1. Paul McCartney
According to PETA, Paul McCartney loves Vegan Enchiladas, a recipe packed with an interesting blend spices like cumin, oregano, and chili plus tofu and steamed spinach. These would make a perfect hearty breakfast and would probably be enjoyed by vegan and omnivores alike!

2. Ellen Degeneres
Leave it to Ellen Degeneres to share a delightfully festive recipe for vegan spring rolls with her audience. Designed by Ellen’s personal chef Roberto Martin, these non-fried rolls are filled with mint, basil, cilantro, cabbage, scallions, carrots, red and yellow bell pepper, and cucumber. These wraps would make a perfect appetizer for a spring or summer party—or just a fun, casual dinner!

3. Gwyneth Paltrow
Love her or raise your eyebrow at her, Gwyneth Paltrow is no stranger to unusual remedies and avant-garde ingredients. Her daily smoothie recipe is no different. In addition to almond milk and almond butter (pretty normal so far), the smoothie also calls for a dose of Moon Dust (powder blends containing adaptogens by Moon Juice). According to Paltrow’s lifestyle website Goop, “Gwyneth drinks one of these every morning, whether or not she’s detoxing. Choose your Moon Juice moon dust depending on what the day ahead holds…brain before a long day at the office, sex dust before a date, etc.”
If Moon Dust isn’t up your alley, try making a regular smoothie or latter and including an adaptogen of your choosing. We like Korean ginseng for stamina, improved memory, and boosted libido.
4. Lea Michele
Animal rights advocate and actress Lea Michelle swears by tofu scramble for breakfast according to Women’s Health. She spices up her scramble with a bit of salsa and avocado.

5. Alicia Silverstone
Alicia Silverstone is one of the strongest contemporary voices for veganism (celeb or not!), and her books are a great resource for anyone interested in kinder living. This soul-warming recipe is perfect for rainy days or whenever you need something extra grounding and healing.
