I'm usually pretty good about switching up my meals, but when it comes to snack time, I'm the first one to grab a boring pre-packaged bar. If you're looking for a quick and easy snack for the week, it's always a good idea to get creative with blending up some energy bites!
These Goji Berry Energy Bites are packed with protein, antioxidants, and healthy fats. Goji berries are a wonderful snack because they're extremely rich in free radical-fighting antioxidants, and they contain over 20 vitamins and minerals. These delicious energy bites are naturally refined sugar-free, gluten-free, and sweetened with pitted dates. I love goji berries in this recipe for the pop of color and tart flavor! If you don't have goji berries on hand, try subbing dried cranberries or another dried fruit instead.
