Healthy Vegan Samosa Wraps

Samosas are little fried dough pockets filled with spiced potatoes that are usually served as an appetizer or a side. I wanted to make a batch but I didn’t want to spend the extra time making the dough from scratch so I just made a standard samosa filling and stuffed it into a wrap with raw vegetables. These wraps are fresh and filling and are packed with warming and healing herbs. Once you make the potatoes, you can use them in the wrap, or you can serve them along side some veggies with rice or naan bread. You can also play around with whatever other veggies you want to add to the wrap. If you choose to double or triple this recipe you can use this as part of an easy meal prep for the week.

Healthy Vegan Samosa Wraps

  • 3 russet potatoes, diced
  • 1/4 cup red onion, diced
  • 1 jalapeno, minced
  • 2 garlic cloves, minced
  • 2 tbsp grated ginger
  • 2 tbsp olive oil
  • 1 tsp turmeric powder
  • 1 tsp paprika
  • 1 tsp cumin
  • 1 tsp ground coriander
  • to taste salt & pepper
  • juice from 1 lime
  • handful fresh kale
  • 1/2 red pepper, sliced
  • 1/2 cup cilantro
  • 4 whole wheat wraps
  • 3 russet potatoes, diced
  • 1/4 cup red onion, diced
  • 1 jalapeno, minced
  • 2 garlic cloves, minced
  • 2 tbsp grated ginger
  • 2 tbsp olive oil
  • 1 tsp turmeric powder
  • 1 tsp paprika
  • 1 tsp cumin
  • 1 tsp ground coriander
  • to taste salt & pepper
  • juice from 1 lime
  • handful fresh kale
  • 1/2 red pepper, sliced
  • 1/2 cup cilantro
  • 4 whole wheat wraps

Directions

1. Bring a large pot of water to a boil. Add the potatoes and cook until halfway done, about 10 minutes.
2. In a large skillet, add the olive oil, onion, jalapeño, ginger, and garlic. Stir well and cook for a minute or two and add the spices.
3. Strain the potatoes and add to the skillet with the spices. Mix well. Cook on medium heat for about 20 minutes, until the potatoes are nice and crispy. You may have to add a little more oil to the pan if it starts to get dry.
4. Remove from heat and stir in lime juice.
5. Layer each wrap with kale, about 1/2 cup potatoes, red pepper, and cilantro.
