Samosas are little fried dough pockets filled with spiced potatoes that are usually served as an appetizer or a side. I wanted to make a batch but I didn’t want to spend the extra time making the dough from scratch so I just made a standard samosa filling and stuffed it into a wrap with raw vegetables. These wraps are fresh and filling and are packed with warming and healing herbs.
Once you make the potatoes, you can use them in the wrap, or you can serve them along side some veggies with rice or naan bread. You can also play around with whatever other veggies you want to add to the wrap. If you choose to double or triple this recipe you can use this as part of an easy meal prep for the week.
