This recipe is a great alternative to the traditional walnut sauce used for gnocchi and pasta, which contains dairy. It's healthier but still flavorful and delicious!
You can obviously make your own gnocchi if you want, but I usually buy vegan ones from the supermarket because, paired with this sauce, cooking time is really minimal and it's something good to make when you don't have much time or just don't feel like cooking.

- 500 grams Gnocchi
- 100 grams Walnuts
- 1 tablespoon Miso paste
- 100 ml Unsweetened soy milk
- 1 tablespoon Extra virgin olive oil
- 500 grams Gnocchi
- 100 grams Walnuts
- 1 tablespoon Miso paste
- 100 ml Unsweetened soy milk
- 1 tablespoon Extra virigin olive oil
Directions
1. Bring water to a boil to cook the gnocchi.
2. Blend walnuts, miso paste, soy milk and olive oil. Taste and add more miso if you want an even more savory sauce.
3. Once the gnocchi are cooked, add a bit of cooking water to the sauce if it is too thick.
4. Pour the sauce on the gnocchi and mix well. Enjoy!
