- For the Flatbread
- 2 cups cassava flour
- 1 1/4 cups water
- 1 tbsp baking powder
- 1 tsp salt
- 1 tsp garlic powder
- 2 tsp olive oil
- For the Hummus
- 1 can of chickpeas
- 1 bulb roasted garlic
- 1 tsp salt
- 1 tbsp olive oil
- 1 tbsp lemon
- 1/4 tsp paprika
- 1/2 tsp cumin
- 1/4 tsp garlic powder
- Toppings
- 1 white onion
- 1 can artichokes
- 2 red peppers
- 10 cherry tomatoes
- 1 bulb roasted garlic
Directions
1. Roast the garlic. Preheat the oven or a toaster oven to 400 degrees Fahrenheit. Grab two bulbs of garlic and cut the tops off to reveal the flesh of the garlic (Note: you do not have to peel the garlic prior to cooking).
2. Place garlic in aluminum foil and drizzle enough oil over the garlic so the tops are shiny and oily. Close up the garlic bulbs in a tight ball of foil and stick in the oven. Set timer for 45 minutes.
3. Prepare your flatbread dough. Measure 2 cups of cassava flour (or other gluten-free alternative) and add 1 tbsp baking powder, 1 tsp garlic powder, and 1 tsp salt.
4. Next, mix in 2 tsp vegetable oil and stir until the flour begins to get sticky. Start adding the water until dough begins to form a ball. Set aside.
5. Prepare roasted garlic hummus. Once the roasted garlic is finished, remove from oven and peel. Set one bulb aside for toppings.
6. Drain and rinse 1 can of chickpeas and place in a food processor, along with 1 bulb of roasted garlic, 1 tsp of salt, 1 tbsp olive oil, 1 tbsp lemon juice, ½ tsp cumin, ¼ tsp paprika, and ¼ tsp garlic powder. Pulse until mixture forms a smooth, slightly grainy texture.
7. Heat up frying pan with oil, and divide the dough into four, even round disks.
8. Place dough in the frying pan, cooking on medium heat for about 3 – 4 minutes on each side, or until golden brown.
9. While the flatbread is cooking, prepare toppings for your hummus flatbread pizza.
10. Fry up one white onion by slicing into slivers and cooking in olive oil on medium-low heat until soft and tender.
11. Chop up cherry tomatoes, red peppers, and a can of artichokes and set aside.
12. Assemble pizza. Spread hummus on top of flatbread and sprinkle cherry tomatoes, red pepper, roasted garlic, onions, and artichoke to taste. You can also use other toppings depending on your personal taste and preferences.
Plate and enjoy!
