When I am overdue to go grocery shopping and my fridge is looking sad and empty, I can usually at least find a package of mushrooms hidden away in a drawer or sitting on the back shelf, lingering around and waiting to be eaten. As for produce, my window sill is always filled with fresh herbs, propagated heads of romaine lettuce, and never ending scallions. All of these came to save the day when I thought I had nothing to eat. I chopped them all up and tossed them together to make the most flavorful salad ever. My fridge door is generally always stocked with half-empty sauces and condiments that I mixed together to make a dressing.
This salad is sweet, spicy, and salty, and has a ton of intense flavor from the herbs and dressing. I was inspired by flavors from the traditional Thai larb dish. The ingredients are super cheap and this is only takes about ten minutes to make. I recommend serving this with a side of rice and cucumbers and you could even combine all of those into a wrap to make a to-go lunch.

- 1 tbsp sesame oil
- 2 cups mushrooms
- 1 clove garlic
- for the dressing:
- zest from 1 lime
- juice from 1 lime
- 2 tbsp liquid aminos
- 1 tsp chili garlic paste
- 2 tsp maple syrup
- 1 tbsp grated ginger
- For the salad:
- 1/4 cup red onion, diced
- 1/4 cup fresh basil
- 1/4 cup fresh cilantro
- 1/4 cup fresh mint
- 1/4 cup scallions
- 1/4 cup romaine lettuce
Directions
1. Heat the oil in a sauté pan over medium low heat. Add the mushrooms and sauté for about five minutes.
2. Add the garlic and sauté for a minute. Remove from heat and set aside.
3. Mix together all of the ingredients for the dressing and pour over the mushrooms. Mix well.
4. Stir in the red onion, herbs, and lettuce and serve.
