These cookies are super spiced, calling for cinnamon, nutmeg, ginger, and clove. The key ingredient is the addition of molasses, making them extra moist and giving them another depth of flavor. These are the perfect warming cookies to make during the colder months, not just for Christmas alone. If you want a sweeter cookie, you can roll your dough balls in brown sugar before baking.
- 1 tbsp Bobs Redmill egg replacement
- 2 tbsp water
- 3/4 cup softened vegan butter
- 1 cup cane sugar
- 1/4 cup molasses
- 2 1/2 cup all purpose flour
- 2 tsp baking soda
- 1/2 tsp sea salt
- 1 tsp ground ginger
- 1 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/4 tsp ground clove
Directions
1. Preheat oven to 350°F. Line two cookie sheets with parchment paper and set aside.
2. In a small bowl, make the egg replacement by whisking together with the water. Set aside.
3. In a large mixing bowl, cream together the butter and sugar.
4. Add the egg replacement and molasses and beat again.
5. In a separate mixing bowl, whisk together the flour, baking soda, salt, and spices.
6. Pour the dry ingredients into the wet ingredients and mix until combined and a dough ball forms.
7. Break off one inch balls of dough and roll between your hands. Drop on cookie sheet and repeat until dough is gone.
8. Bake for 12 minutes and remove from oven.
9. Let cool on cooling rack and serve.
