2 Healthy Vegan Snacks for Work

Working in an office setting can sometimes lead to unhealthy eating.  It seems there are always occasions to celebrate.  Promotions, retirements and birthdays lead to sugary snacks and treats in the break room.

After ending a two-month freelance assignment, I wanted to do something special for my coworkers.  Since sugary treats are readily available, I decided to make them something tasty but also healthy and unique.  These vegan snacks will satisfy a sweet tooth while providing energy for the workday.

Next time you are going to bring something in to the office, consider one of these recipes.  After all, healthy people are happy people and I think we would all prefer to work in a happy environment.

 

Cinnamon Apple Snack MixHealthy Snacks: Cinnamon Apple Snack Mix | Peaceful Dumpling

3 cups raw almonds

2 apples

2 tbsp vanilla extract

1 tbsp coconut oil

1 tbsp cinnamon

2 tsp coconut sugar

Toss the almonds in the coconut oil and add the vanilla and sugar, mix to combine

Spread the almonds on a baking sheet and bake at 350 for 15 min, set aside to cool

Slice the apples however you choose, I used my mandoline slicer to make very thin chips

Dehydrate at 125 for 3-4 hours

Add the dried apples to the almonds and serve

 

 

 

 

Healthy Snacks: Raw Ginger Cookies | Peaceful DumplingRaw Ginger Cookies

1 cup dates

1/2 cup oats

1/3 cup walnuts

2 tbsp fresh ginger, grated

2 tsp vanilla

2 sm pieces crystalized ginger

Place all ingredients into the food processor and pulse until everything is combined

Roll the mixture into balls and then flatten to make your cookies

Serve as is for a chewy cookie, or dehydrate at 135 for 6 hours for a crispier cookie
