Bethany Cox is a recent graduate in chemical engineering from the University of Utah. She is passionate about sustainable and self-sufficient living, organic gardening, and experimenting with vegan cooking. Her pastimes include spoiling her 2 cats and 1 fish, eating seasonal and locally sourced food, and learning about the medicinal uses of little-known herbs and food.
