Easy Nectarine Pancakes For Lazy Sundays

Sunday is my absolute favorite day of the week. Besides being my sole day off, I get to do everything on my own time- wake up, go for a run, and make delicious pancakes! Pancakes have been a Sunday staple for a few years, and I love changing up the fruit in my base recipe for the seasons. Right now I am all about the stone fruit, since it’s just coming in season, but you could use anything from blueberries to fresh cherries . Serve with a drizzle of pure maple syrup and a cup of iced coffee or tea for the perfect lazy breakfast.

Easy Vegan Nectarine Pancakes - Peaceful Dumpling

Easy Nectarine Pancakes

Ingredients (serves about 2 hungry people):

1 cup of flour- I like a combination of whole wheat and oat flour for a chewier texture
1 tablespoon of raw sugar
1 1/2 tablespoons baking powder
Pinch of salt
1 cup of soy milk- almond works great too!
2 tablespoons of coconut oil
1 cup fresh, sliced nectarines- plus more for garnish
1/2 cup slivered almonds
1/2 teaspoon vanilla extract

Directions:

In a small bowl, combine the flour, sugar, baking powder, salt, and almonds.
Add the milk, coconut oil, and vanilla extract and mix until barely incorporated. It may be a bit lumpy still but that’s ok!
Carefully fold in nectarines until barely mixed into the batter
Heat a skillet and grease with more coconut oil. Add a ladle full of batter in the skillet and cook until the edges start to bubble and turn golden brown. Flip over and repeat.
Serve in a large stack with maple syrup and enjoy!
