Plain old sugar cookies are such old news. If you Google search “sugar cookie recipe” you will be provided with 22,400,000 results. No joke. These overdone cookies need a re-vamp, a P.R. overhaul. I am here with an answer to (some of) your problems! Rejoice in the sweet, sweet allergen-free deliciousness of agave nectar (if you have never tried it, you may be the tempted to call it THE nectar of the Gods…just saying). Agave nectar has a low glycemic index, simply meaning it will not give you the jittery blood sugar spike that processed sugar would. Also, agave nectar is a natural anti-inflammatory ingredient as well as strong anti-microbial and immune boosting properties! Now go on about how you agree with my nectar of the gods description…I will wait until you’re done!
Here’s an awesome, allergen-free “sugar” cookie recipe that is heavenly….get it? Enjoy!
Agave Vanilla Gluten-free Sugar Cookies
1/2 cup soy free butter (Earth Balance makes a great one!)
3/4 cup light agave nectar
1.5 tsp vanilla extract
1/4 cup vegetable oil
1.5 cup allergen-free flour (Bob’s Red Mill makes a great gluten-free flour!)
1 tsp. sea salt
Preheat oven to 350F and lightly grease a cookie sheet with vegetable oil
Place soy-free butter, agave nectar, oil and vanilla extract in a food processor and process on low until creamy
Add flour and salt slowly and mix on low until uniformly mixed and smooth
Scoop out teaspoonfuls and place on cookie sheet leaving about 1 inch between each, these cookies spread!!
Bake for 15 minutes or until the edges brown, remove from oven and let cool completely
