I have a love/hate relationship with jams and jellies. The freshly jarred jams from farmer’s markets are the absolute best thing I have ever tasted, but the berries that create them are only in season for about one to two months out of the year- bummer. The store-bought brands just cannot compare and have loads of sugar and artificial sweeteners. When I have tried to create my own I fail miserably every time to capture the fresh-picked taste I love. So, I settled on creating a delicious berry spread. It can be used even when berries are not fresh-picked because tropical coconut brings out the juicy fruit flavors that may have otherwise been bland in an off-season jam or jelly. This spread is perfect for toast, bagels or delicious muffins! It can also be used as an easy appetizer with some multi-grain crackers for a party! Enjoy berry-lovers!
Delicious and Light Coconut Berry Spread
8-10 large strawberries, whole with stems cut
15 blueberries
1/8 cup organic coconut oil
1/4 cup organic coconut milk
1 tsp. agave nectar
1/2 tsp. vanilla extract
In a food processor blend strawberries, blueberries, vanilla extract, agave nectar and coconut milk until slightly chunky, scrape from sides into a small bowl
Slowly mix in softened coconut oil (room temperature works fine) with a spoon until evenly distributed in mix
Place in small glass or ceramic container covered tightly with plastic wrap, place in refrigerator overnight and enjoy as a morning treat!
