It’s February. It’s ice-raining in Georgia….I am not sure how to feel about this. I mean, this is completely normal weather behavior for, say, New York, where I am from, but I have been spoiled by a 50-something degree Christmas and New Year’s Day and many 70-degree days sprinkled in since then. However, like I said, ice-rain. This is actually new for me. I have seen ice: I went to college in Western New York, the land of ice and lake effect snow. I know rain: Long Island is my home and summer time is humid like no other….but ice-rain?! What on Earth? Anyway, I am all about some cozying up on the couch and relaxing all day, but I am scheduled to work non-stop this week and this weekend so I rely pretty heavily on my caffeine fix to kick my butt into gear in the icy morning and warm me up for the ahem cold Georgia day ahead. Why not make these kick-start DIY coffee drinks while we are at it?! I have had some fun making these the past few days and I hope you enjoy them my loyal Freedom Friday team! Happy weekend!
Easy Spicy Cinnamon Cafe
Brew 1 cup coffee from fresh grounds
In a non-metal shaker (OXO makes a great one!) mix 1/4 cup rice milk, 1/2 tsp. vanilla extract and 1/4 teaspoon cinnamon; shake, shake, shake!
Pour over freshly brewed coffee in a tall mug, mix with a cinnamon stick and enjoy!
Vanilla Sugar Coffee
Brew 1 cup coffee from fresh grounds
In a non-metal shaker mix 1 tsp. vanilla extract, 1/8 cup rice milk, 1 tsp. raw sugar, 1 tsp. agave nectar
Add coffee to shaker and shake vigorously !
Pour in a tall mug, top with some allergen-free whipped topping (coconut milk, confectioner’s sugar and vanilla whipped together is delicious!) and enjoy!
Coco-Cafe
Brew 1 cup coffee from fresh grounds
In a non-metal shaker mix 1 tsp. cocoa powder, 1 tsp agave nectar, 1 tsp. raw sugar and 1/8 cup rice milk
Pour mixture over coffee and enjoy!
NOTE: Coffee has a bad rep lately. It is sourced (sometimes) irresponsibly and it is important to make sure we are buying our coffee from (and therefore supporting) responsible corporations. Good news: Starbucks and Green Mountain Coffee are both responsible when it comes to sourcing their beans!
