Morning time has been semi-rough for me lately. My beloved one-year-old dog has decided to return to infantilism/puppy-ism and wake up several times throughout the night for potty trips. Come 6 a.m., my snooze alarm gets quite the workout because of these nightly frolics. I have written about needing a post-workout motivation before in the form of yummy recovery smoothies (works every time for me!) but this amazing and incredibly easy recipe has been my get-out-of-warm-snuggly-puppy-bed motivation for the past few mornings. It is also comforting on these cooler mornings – we are heading into a real Georgia fall, folks! It does exist I am told! This overnight recipe makes my mornings less complicated and super delicious. Dreamy Berry Breakfast Cobbler
2/3 cup rolled oats
1/3 cup barley cereal
1/2 cup rice milk
3 tsp. ground cinnamon
1 tsp. agave nectar
1 tbsp. flax seeds
1/3 cup blueberries
1/3 cup chopped strawberries
1/3 cup blackberries
In a glass bowl or mug (so pretty in a glass mug or bowl, but not totally necessary! Plastic and ceramic work too.)’ fill bottom with 1/3 cup rolled oats, set remained aside
sprinkle 1 tsp. cinnamon over oats and layer blueberries on top, drizzle with agave nectar and flax seeds
Layer barley cereal evenly over existing layer and sprinkle with 1 tsp. cinnamon
Layer blackberries over existing layer and then add remaining oats evenly on top of existing layers
Top with strawberries and any remaining berries and sprinkle with cinnamon
Pour rice milk down the side of the layers and let fill to the top layer
Refrigerate overnight and enjoy come morning!
*If you do NOT suffer from nut allergies, add almonds or cashews to the mix, yum!
