My awesome husband had his wisdom teeth removed yesterday. Doctor’s orders: “Anything that does not need to be chewed can be eaten.” Ok, got it. I had the day off and had plenty of time to experiment with delicious, mushy-textured comfort foods for Christopher. For dinner we had a delicious soup with these amazing potatoes as a side. They are perfectly creamy, herbed and spiced with roasted garlic; perfect for my wisdom-toothless husband’s post-op diet! Enjoy these when you need a taste of home, an easy side dish or a tried and true warm comfort food. Have a fantastic weekend all! Happy Friday!
Garlic Herbed Mashed Potatoes
Serves 2-3
2 Large Idaho potatoes, cleaned but not peeled
2 tsp. dried Oregano
2 tsp. dried Parsley
1 cup nutritional yeast
Ground Black Pepper to taste
4 cloves garlic (roasted whole with the skin on at 400 degrees F for about 40 minutes, then peeled)
2 tbsp Soy-Free Butter Substitute
1. Boil potatoes for 5-10 minutes at a rolling boil until soft to the touch of a fork, remove carefully and place in large mixing bowl
2. Mash roasted garlic and potato with a potato masher or large fork until mixture is mostly smooth with some small chunks throughout
3. Mix in soy-free butter sub (Earth Balance makes a delicious soy-free spread!) and nutritional yeast while potato mash is still hot
4. Let potato cool and then fluff lightly with a fork
5. Sprinkle with herbs and pepper and serve immediately.
