Getting back into running shape is bittersweet for me. Bitter because of the many tough miles I have to put in to get my body into better condition but more so sweet because of the post-run feel-good vibes (and the super sweet post-run recovery shakes I make almost daily…) that compare with nothing else. Running has been my go to cure-all for everything from a headache to a bad mood to a negative attitude for as long as I can remember and it has not failed me once. I try to live by this saying when deciding whether or not to head out on a run: “you will never regret making the choice to fit in a good workout…” Especially when it is followed by this delicious post-run recovery shake! Post-Run Mint Chocolate Recovery Shake
1 sprig mint, chopped very small
1 cup coconut milk (although coconut is a tree nut, many folks with tree-nut allergies are not allergic to coconuts; however, always consult with your allergist before consuming a new food item!)
1 scoop rice protein powder
½ cup ice
1 tsp. cocoa powder
1 tsp. agave nectar (or stevia!)
1 banana, chopped
1 pinch ginger powder (reduces inflammation throughout the body)
Lightly blend coconut milk, ice and banana
Add mint sprig and blend until pureed
Add cocoa powder, rice protein powder and ginger powder; blend until smooth
Blend in agave nectar until shake is uniform texture
P.S.—To encourage myself to get my butt out of bed for a run in the morning, I make this the night before and store it in an airtight smoothie shaker in the fridge!
