Sizzling Salsa Fried Rice - vegan fried rice recipe

Salsa holds (and warms) a special place in my heart. The sheer versatility of salsa wins me over enough to add it to several dishes a day. Breakfast burritos can be spiced by it, lunchtime salads can be absolutely MADE with a scoop of salsa and you can score major points with friends and family with this amazing (if I do say so myself…) salsa fried rice recipe. Yes you heard me correctly : long grain rice fried with diced veggies and salsa. All things are right in my world after having made this dish. Happy Friday friends!

Salsa Fried Rice

3 cups cool, cooked rice (long grain or brown)

1 medium white onion, diced

2 large carrots, cut into fours and sliced thin lengthwise

1 small can plain corn

1 green bell pepper, diced

Sea salt and black pepper to taste

Jamaican jerk spice (many stores like Whole Foods carry this versatile and delicious spice!)

1 tbsp. frying oil (coconut oil is delicious, safflower oil works well too as a high heat tolerant oil)

2 tbsp. salsa (we love Pain is Good! brand….plus the name is hilarious!)

 

Heat oil in a large pan or wok until small bubbles begin to form, add onions and salt and pepper

Cook onions on medium until the edges begin to brown, add green peppers, stir in corn and continue to cook, stirring occasionally for about 3 minutes

Stir in rice and jerk spice and continue to stir while rice is frying on medium heat and continuously move rice around until it becomes a bit crispy

Slowly stir in salsa

Lower heat and cover, let rest for about 3 minutes and enjoy immediately! Serve with of course, more salsa. 🙂
