As a working mother of one (cat), I don’t always have time to plan elaborate meals. I confess that more often than not, I realize it’s 2 p.m. before getting a bite to eat, or 8:30 p.m. without dinner in sight, following an after-work run. What helps in these times of need is a quick little bite of something healthy and easy, that doesn’t require dirtying a bunch of pots and pans. Enter this tasty, filling, and oh-so-pretty pea dip. Toast a few slices of bread, spread it on and top with a few slices of French radish, some fresh squeezed lemon juice, and coarse salt.
French Radish and Peas Bruschetta
makes enough for about 6 pieces bruschetta
1 cup frozen peas or fresh shelled peas
1 tbsp raw walnut butter
5 pieces walnut halves
1 tbsp nutritional yeast
1/4 avocado
about 2 tsp lemon juice, plus more to taste
1 medium garlic clove, minced
2-3 French radishes, sliced into thin rounds
Coarse pink Himalayan salt
Fresh black pepper
1. Boil water in a small sauce pan. Add frozen peas and boil for about 1-2 minutes. Remove from heat, rinse in cold water, and drain well.
2. In a blender or a food processor, add peas, walnut butter, walnuts, nutritional yeast, avocado, lemon juice, garlic, and blend on high until smooth. Add salt and pepper and blend for another minute or so.
3. Toast a few slices of bread and cut into halves. Spread about 1 tbsp of the pea dip onto each half. Top with a few pieces of radish rounds. Sprinkle with a little more lemon juice and pepper on top, and serve.
