Here is the recipe for a perfect (and healthy- shh!) fruit-filled raw vegan dessert bar! I have had this one on the mind for a while and I finally got to it. These raw bars can be eaten for breakfast, after dinner or honestly whenever you want as long as you are near a freezer! These delicious treats can be created in under ten minutes and only take about an hour to freeze into form. Another perk: these bars come out bright pink; pink makes me happy, hence their title. Enjoy creating these perfect little pink bars of fruity raw vegan perfection!
Happy Strawberry Banana Raw Vegan Bars
Yields about 8 small bars
1 cup rolled oats
5 strawberries, cut into chunks
2 bananas, sliced
1 cup plain, unsalted almonds
1/2 cup homemade cashew milk (2:1 ratio of overnight soaked cashews to water in food processor)
1/2 cup cool water
Add almonds and fruit to food processor and pulse a bit to break them up
Add water and cashew milk and pulse a few times to blend well
Add rolled oats to food processor a 1/4 cup at a time and pulse to a uniform (somewhat chunky) texture
Pour mixture into square, nonstick pan and smooth to edges
Freeze for one to two hours, when completely frozen (use a toothpick to test), pop out of pan and slice into bar form
Store for 2-3 days in an airtight container in the freezer and enjoy throughout the week!
