Last week I graduated after several years adventuring in the Sociology realm, and one of the most important things I learned was that food can be your fuel and get you through even the lengthiest of study nights or work shifts. But finding that great balance of a snack that is fast, healthy, and tastes delicious can be quite the daunting task of trial and error. So I was saved when my brother’s girlfriend gave to me the supreme snack recipe that hits that insatiable sweet tooth with a simple and genius combination of goodies that are filled with health benefits and flavor! The creamy peanut butter and oats are a harmonious and tasty combination of protein that will help increase your energy in a matter of a few bites. You can’t go wrong once dark chocolate chips and coconut are added to the mix, which among many health perks are renowned for reducing stress, increasing antioxidants–not to mention that they taste simply amazing! As if that weren’t enough, agave and cranberries can be thrown in too, which gives you a boost of vitamin C and fiber. I have found they are very complimentary to your favorite herbal tea, coffee, or soy milk and also act as a glorious stow away treat in your bag for later!
Also, I don’t think I mentioned that there are only two steps to making such tasty treats, three if you include snagging the delicious ingredients at the store to make them, so without further ado…
No Bake Peanut Butter, Oat, Chocolate, and Coconut Energy Bites!
1.5 cups old fashioned oats
1 cup natural dried cranberries
1.5 cups of unsweetened shredded coconut
1 cup natural or fresh ground Peanut Butter
1.5 cups vegan chocolate chips (or carob)
1/4 to 1/2 cup Agave Nectar (depending on preferred sweetness factor)
1. Mix all the ingredients together in a large bowl until all is incorporated. Cover with a plate or dish towel and place in the fridge for at least 30 minutes. That way they will be easy to work with and set up nicely.
2. Using your spoon or hands, take enough of the mix to fit in your palm and roll into balls.
All done–enjoy!
Natural vanilla essence, wheat germ, chia seeds, or flax seeds can also be added to the mix if it suits your fancy, and let me know if you have any ideas on other additions as well; the possibilities are endless!
