If you follow the dessert recipes I write, you might be on to me. I have an insatiable sweet tooth, and find all kinds of ways to make them healthy so I can indulge. This recipe is the real deal. Full-fat coconut cream tells your body it is getting just what it ordered. The natural sweetness of the banana is only slightly enhanced with a touch of salt and stevia extract. No extra sugar, and the chia seeds satisfy with their high fiber, leaving you feeling both treated and nurtured.

- 1 Banana, ripe
- 1/3 Cup Coconut Cream
- 2-3 drops Stevia extract
- 1/2 Teaspoon Vanilla Extract
- Light Dash Salt
- 2 Tablespoons Chia Seeds
Directions
In a blender, combine the banana, coconut, stevia, vanilla, and salt until smooth. Pour in to a glass or dish, add the chia seeds, and stir. Let the pudding sit for about an hour. Pretty great breakfast, if you ask me!
