Occasionally, I experience a “happy accident” in the kitchen. This morning, I was trying to make an almond milk fruit smoothie. I was doing my usual intuitive thing, which simply involves throwing in whatever strikes my fancy. After adding an avocado, the smoothie took on a texture and taste more similar to yogurt, and thus the Vegan Strawberry Kiwi “Yogurt” was born! Although this smoothie isn’t technically a yogurt since there are no live cultures, etc., it would make a killer granola parfait! By including avocado, you’ve just added a dose of healthy fat that will help balance blood sugar and fight free radicals!
Adorn with a few simple garnishes and you’ve got a beautiful, nutritious treat to serve guests–or yourself!
Vegan Strawberry Kiwi “Yogurt”
Ingredients:
(Serves one)
1 cup unsweetened almond milk
3/4 kiwi (save the remains for garnish)
6 medium strawberries (save a few thin slices for garnish)
1 small avocado
juice of 1/2 lime
teeny tiny pinch of salt
Directions:
Peel kiwi, wash strawberries, remove avocado meat, and blend with the other ingredients until smooth and creamy. Now you have your vegan strawberry kiwi “yogurt”! Enjoy with fruit or other enticing toppings like cereal, granola, cocoa nibs, and crushed nuts.
