If you find yourself in a breakfast rut as much as I do (hello, boring oatmeal!), you’ll love these truly inspired vegan breakfast recipes by some of the vegan food industry’s top chefs and cookbook authors. There’s a little something for every taste–from raw power bowls to espresso-laced pancakes to soul grits–yes, soul grits. Read on!
1. Bryant Terry
James Beard Award-winning Chef Bryant Terry, author of Vegan Soul Kitchen and Afro-Vegan, shares his mouthwatering recipe for creamy vegan grits with garlic chips and greens here. The yellow grits are thickened with soaked cashews and seasoned with vegetable broth, olive oil, and yellow onion while the dandelion greens served over the grits are jazzed up with a bit of sugar and apple cider vinegar. The recipe is super simple yet looks insanely gourmet. I want to eat some right now!
2. Chef Chloe
The lovely Chef Chloe is beloved for her vegan Italian recipes and her Cupcake Wars-winning cupcakes. Don’t limit yourself to only those recipes, however. This summer smoothie parfait is packed with fresh fruit and flax seeds and is layered with granola—a combo sure to keep you feeling refreshed and energized throughout the morning. For something a little more decadent (Sunday brunch, perhaps?), try these Tiramisu Pancakes with espresso and dark rum!
3. Isa Chandra
For a slightly more rustic breakfast treat, check out these Blueberry Oatmeal Waffles by legendary vegan recipe guru Isa Chandra. They’re sweetened with maple syrup and applesauce—mmm! Plus, with whole wheat flour and oats, you know you’re getting a healthy dose of morning fiber.
4. Kathy Patalsky
Author of Healthy Happy Kitchen and 365 Vegan Smoothies Kathy Patalksy can make a mean vegan breakfast sandwich (with several yummy variations). The recipe comes together in 15 minutes and packs a punch with Harissa, shredded vegan cheese, bell pepper, vegan sausage, greens, and sliced mushrooms. You also have the option of panini-pressing this bad boy!
5. Matthew Kenney
Raw food chef and heartthrob Matthew Kenney shares his recipe for a delicious dragon fruit power bowl. It’s blended with coconut milk, lime juice, banana, strawberries, and coconut oil. Toppings include mango, buckwheat granola, and shredded coconut.
