If I had to choose, sweet potatoes would rank high on my list of favorite foods, nestled snugly in between kale and tahini. I love sweet potatoes in many preparations: baked, steamed, sautéed, juiced…I’m convinced my beloved sweet potato can do no wrong. In this recipe, I tried to elevate this special tuber with warming spices and a touch of sweetness, pureed into a silky smooth spread.
Maple Chili Sweet Potato Spread
(Makes about 1 1/2 cups)
Ingredients:
2 small sweet potatoes or 1 large
2 teaspoons chili powder
1-1 1/2 tablespoons maple syrup
Instructions:
1. Steam or bake sweet potatoes until they are soft and can be easily pierced with a fork.
2. In a food processor, scoop the insides into the bowl of a food processor, along with chili powder and maple syrup to taste.
3. Process sweet potatoes until they have reached a very creamy consistency. Serve!
Despite this being a rather simple recipe, the maple chili flavors are complex and contribute a very autumnal flavor. I like to serve this dip with crackers, vegetable crudites, on collard wraps, or by the spoonful!
