If you don't like Brussels sprouts, you just haven't tasted these sweet and savory glazed sprouts with toasty walnuts and juicy raisins. As for me, I'm a big Brussels sprouts fan. Aren't they so cute and delicious?? I think that they're irresistible simply dressed with olive oil and salt, with maybe a touch of dried herbs, and roasted in the oven, but my boyfriend doesn't care for them. When my mom sent over a care package with homemade apple jam, I immediately thought about pairing it with Brussels sprouts to make this sweet and savory dish. First, re: jam--my mom made it from organic golden delicious apples in their garden. It's so delicious and I ate spoonfuls straight out of the jar! If you can use homemade apple jam, that will be ideal. If not, please feel free to sub with fig preserve or apricot preserve rather than apple sauce. The jam consistency is ideal for a glaze. Also, re: this recipe. It turns out so amazing. When it's right out of the oven, the caramelized Brussels sprouts (with outer leaves slightly crispy, insides melty) combine with toasted walnuts and raisins to create incredible texture and flavor. It's probably my favorite way to eat Brussels sprouts, at this point. Enjoy this any time, or put it on your Thanksgiving table. :)

Healthy Sides: Apple Glazed Brussels Sprouts

  • 20-25 Brussels sprouts, trimmed and halves
  • 1/4 cup Apple jam (or sub fig preserve or apricot preserve)
  • 1 1/2 tbsp coconut oil
  • 1/2 Onion, chopped fine
  • 1/2 cup Walnut halves
  • 1/3 cup Raisins
  • to taste Sea salt and fresh black pepper

Directions

1. Heat oven to 375* F. Line a baking sheet with foil, and spread about 1 tbsp of coconut oil with a spatula. 2. Lay the Brussels sprouts and onions on the baking sheet, sprinkle with salt and pepper, and gently toss. Drizzle with remaining 1/2 tbsp coconut oil. 3. Bake in the oven for about 25-30 minutes until cooked through, caramelized and browned in places. 4. Take out of the oven. Add apple jam and walnuts, and toss to combine. Put back in the oven for addition 7-8 minutes until walnuts are fragrant and jam glazed, but not burned. 5. Take out of the oven, add raisins and toss to combine. Though delicious later on, it's deal to serve immediately. Enjoy!
