Hail Mary, full of coconut, how I love to eat thee. If you think I am screwing up a very beautiful prayer, I’m not. It is an ode to Hail Mary Macaroons. They are so delicious, as are the miracle tarts.
When ever I find something delicious, I try to recreate it. Probably only to know I can simply make more when they are gone, defending myself from mourning an empty bag. The following is a recipe to rival the goodness that is a Hail Mary raw, vegan macaroon.
Raw Vegan Macaroons
3/4 cup cashew meal
1 cup shredded coconut
1 tbsp hemp hearts (for rationalization purposes) 😉
1 tbsp maple syrup
6 drops liquid stevia
1 tsp vanilla extract
dash of salt
Throw everything in a mixing bowl, and mix to dough. Taste to sweetness preference. Roll in to balls. Set in fridge for an hour- but who am I kidding; I always eat one right away!
