Every week I like to make a healthy snack to take with me into the week. I recently made this Banana Walnut Protein Cookies on a family road-trip to Indiana. They kept that traveller's hunger away and were a nice break from raw-bars for snacking! They come together quickly with only 4 ingredients, and are naturally sweetened with smashed banana. I used walnut butter to make mine, but if you don't have walnut butter sub any nut butter of choice to yield the same results. IF you're not a fan of protein powder, sub the protein powder for oat flour or more almond meal. I like to enjoy mine with a big glass of almond milk and a drizzle of peanut butter on top. Enjoy these Banana Walnut Protein Cookies as a quick breakfast, snack, or dessert!

- 1/2 banana, smashed
- 1/4 cup almond meal
- 3 Tablespoons vanilla protein powder
- 1 cup walnut butter
Directions
1. Preheat oven to 350* F and line a baking pan with parchment paper.
2. Add walnut butter, vanilla protein powder, almond meal, and 1/2 banana to a bowl and smash with a fork until well combined.
3. Using a cookie scoop, drop batter onto the parchment paper in ~1.5 TBS balls and flatten with a fork in a cross cross pattern.
4. Sprinkle with crushed walnuts and bake for ~10 minutes.
5. Serve immediately! Store leftovers in the fridge for 5-7 days and freeze for long term storage.
