This is a vegan ice cream sandwich made with peanut chocolate cookies and velvety ice cream. It's great for hot days when you are craving creamy, filling, and cold treat. Besides, it is super easy to make and it doesn't require expensive or rare ingredients.

- 4 frozen bananas (the riper, the sweeter)
- !/4 cup plant milk
- 1 teaspoon vanilla essence
- 1/4 cup cacao powder (70%)
- 1 cup flour (could be wheat, oats, or the kind you like)
- 1/3 cup peanut butter
- 1/2 cup brown sugar (or the sweetener of your choice)
- 1/4 cup plant milk
- as much as you like chopped peanuts (or the nut of your choice)
- 1 bar Chocolate bar (70% cacao)
Directions
For the ice-cream
1. Peel and freeze the bananas.
2. Blend the frozen bananas, the 1/4 cup plant milk and the vanilla essence.
3. Put the blend in a bowl and freeze one hour.
For the dough:
1. Put the flour, cacao, sugar in a bowl and mix.
2. Add the peanut butter and 1/4 cup plant milk and mix until a dough is formed.
3. Stretch the dough until it is 1 cm thick.
4. Cut it in circles (you can use a cookie mold, a cup or whatever you have on hand).
5. Bake the dough at 180°C for 6–8 min.
The final steps:
1. Take out the ice cream and cut it with the same cookie mold/cup/etc.
2. Put together the sandwiches: a cookie at the bottom, then the ice cream, and a cookie on top.
3. Melt the chocolate bar with a little bit of water or milk (could be in the microwave for 30 sec. or water bath).
4. Drip the melted chocolate on the top cookie.
5. Dip the sandwich in the chopped peanuts.
