You can enjoy these tostones by themselves, but I like to dip them in this cilantro garlic sauce. The fresh, bright flavors from the herbs and lime juice bring the tostones to life. Serve these alongside a salad and some rice to turn it into a more substantial meal.
- For the tostones:
- 1 green plantain
- 2 tbsp olive oil
- to taste sea salt
- For the sauce:
- 1 cup fresh cilantro
- 2 garlic cloves
- 2 tbsp olive oil
- 1/4 cup white wine vinegar
- juice from 1 lime
- 2 tbsp honey
- salt and pepper to taste
Directions
1. Preheat the oven to 400°F.
2. Peel the plantain and slice it into 1/2 inch chunks. Add the chunks to a bowl with the olive oil and toss well to coat.
3. Spray a large baking sheet with non stick spray and arrange the plantains in a single, even layer. Sprinkle with sea salt.
4. Bake for 10 minutes and remove from oven. Flip the plantains. Using a tostone press or the bottom of a flat cup, flatten the plantains until they are about 1/4 inch thick.
5. Place the plantains back in the oven and bake for another 15 minutes.
6. While the plantains are baking, prepare the sauce. Add all of the ingredients to a blender and blend well.
7. Remove the tostones from the oven and pat dry with a paper towel before serving.
