These Vegan Peanut Butter Cookie Blondies are inspired by a new flavor I spotted at a local ice cream shop—peanut butter Oreo. Sadly, this flavor was not vegan-friendly, so of course I had to create something to satisfy my sweet tooth!
- 1 can chickpeas
- 1 tsp baking powder
- 1/4 tsp baking soda
- 1/4 tsp salt
- 3/4 cup granulated sugar
- 1/3 cup flour
- 1/4 cup unsweetened applesauce
- 1/4 cup peanut butter
- 1/4 cup (or more) chocolate chips
- 1/4 cup (or more) white chocolate chips
- 10 crushed chocolate cookies
Directions
1. Put the chocolate cookies (like Oreos, which are vegan) into a secure plastic bag to crush them. I prefer to leave a few bigger chunks of cookie to add some texture to the blondies. Set this aside for later.
2. Drain and rinse the chickpeas.
3. Add all ingredients except for the chocolate chips and cookies into a blender or food processor. Blend until smooth, and pause to scrape down the sides of the blender if necessary.
4. At this point, I poured the batter into a bowl to make it easier to stir. Mix in chocolate chips and cookie pieces. Use your best judgment and add more (or less) if needed!
5. Pour into a pan lined with parchment paper. Bake for about 30 minutes at 350°F.
