These poppers were a happy accident I stumbled upon one day a few months ago. As I began putting together my vegan Super Bowl menu, I remembered how incredibly easy and tasty these were and decided it was the perfect time to share them! Many vegan popper recipes on the internet are filled with high-fat ingredients, breading, and more. These poppers are a lighter version made with hummus and topped with crushed tortilla chips!
YIELDS
8 jalapeño halves
PREP TIME
COOK TIME
TOTAL TIME
- 4 large jalapeños
- 2 tbsp vegan cream cheese
- 1 tbsp spicy hummus
- 1 tbsp nutritional yeast
- 1 clove garlic
- optional crushed tortilla chips for topping
Directions
1. Prep jalapeños - wash and cut in half length-wise. Carefully de-seed.
2. Sauté garlic for about 2 minutes or until fragrant. Pre-heat oven to 375 F.
3. Mix in cream cheese and hummus and heat until mixture is melted. Add nutritional yeast and remove from heat.
4. Fill jalapeños with cream cheese mixture and bake for 20-25 minutes. Top with crushed tortilla chips for the extra crunch.
