It’s the first week of the New Year and I know many people probably share the same resolution—to eat a little more clean and healthy. I feel like a lot of people make this more complicated than it has to be and they give up on their goal too easy and quick. To make a light but filling side, you can toss together whatever veggies you have on hand with some beans for protein and a light vinaigrette for flavor. I made mine with some okra, tomatoes, and corn and it was totally satisfying.
This salad has a bunch of raw ingredients in it, bringing all kinds of nutrients to the table. I know okra is often associated with being slimy, but once it is sautéed, it gets nice and crispy. You can enjoy this salad as is, or it can be served over rice or with tortilla chips. This is really simple to make and stores well in the fridge to help make meal planning easy. It also tastes wonderful served both hot and cold.

- 2 tbsp olive oil
- 2 1/2 cups okra, sliced
- 1 clove garlic, minced
- 1 1/2 cup tomatoes, chopped
- 1 (15oz) can corn kernels
- 1 (15oz) can black beans, drained and rinsed
- 1/2 cup red onion, diced
- 1/4 cup fresh cilantro
- For the dressing:
- 1/4 cup olive oil
- 1/4 cup red wine vinegar
- 1/2 tbsp raw honey
- 1 1/2 tsp dijon mustard
- 1/2 tsp dried oregano
- 1/2 tsp dried parsley
- salt & pepper to taste
Directions
1. In a large pan, heat the olive oil over medium high heat.
2. Add the okra, sauté for 5 minutes, and flip to brown the other side. Add the garlic in the last couple minutes of cooking.
3. Remove from heat and add to a large mixing bowl.
4. Add the tomatoes, corn, black beans, onion, and cilantro and mix well. Set aside.
5. In a small mixing bowl, whisk together all of the ingredients for the dressing.
6. Pour dressing over salad and serve.
