Do you ever have a meal that just sticks with you, and you find yourself randomly craving it? This may be the most vegan thing I've said to date, but that meal for me is a fruit salad I had last summer. Never did I think I'd be the type to daydream about fruit salad, but here we are.
I decided it was time I addressed this longing and made my own obsession-worthy fruit salad! I wanted to make one that had a bit of a zesty kick so I whipped up a homemade version of the well-known Mexican fruit seasoning Tajin and included a few of my favorite summer fruits. The result is a simple and refreshing fruit salad that's perfect as a snack, appetizer, or dessert.

- 2 cups Watermelon, chopped
- 1 cup Cherry tomatoes, halved
- 1 cup Cucumber, chopped
- 1-2 tablespoons (depending on taste) Fresh cilantro, minced
- 1 Small lime
- 1/2 tablespoon Demerara sugar or raw sugar
- 1 teaspoon Salt
- 1 teaspoon Paprika
- 1/2 teaspoon Black pepper
- 1 teaspoon Chili flakes
Directions
1.) Chop the watermelon and cucumber into small bite-size pieces and halve the cherry tomatoes. Place these all into a medium mixing bowl.
2.) In a small bowl mix together the sugar, salt, paprika, black pepper, and chili flakes. If you want to get fancy, use a mortar and pestle to grind these ingredients into a fine seasoning.
3.) Add the juice of 1 small lime, the cilantro, and the seasoning mixture into the bowl of chopped fruit. Toss lightly until all the fruits are coated.
4.) Served chilled and enjoy!
TIP: The salt will extract some of the juices from the fruit, and this liquid would be a great addition to a summery Blood Mary or Michelada cocktail!
