Apples are no longer the word on everyone’s lips (that’s September!), but that is exactly why now is a great time to use them in a different way. Apples you buy in February are already several months old–but they’re still very tasty, especially if you bake them in the oven! Most baked apples, I think, are very delicious but overly sweet. I made mine without any sugar and it was just right for me! It’s so easy, but makes you feel so accomplished while the smell of coconut and apples fills the apartment. It’s simply delicious on its own, or decadent when made into a “sandwich” with vegan cream cheese or nut butter between the two halves. You know, like a bagel. Simply Sweet Coconut Baked Apples
3 apples
3 tsp coconut oil
2-3 tbsp coconut flakes
1/2 tsp cinnamon
1 tsp vegan sugar (optional)
1. Heat the oven to 325 degrees.
2. Cut the apples crosswise in half. Core each half, making sure not to leave a hole on the bottom.
3. Add about 1/2 tsp coconut oil to the empty space at the center of each half. Fill with coconut flakes, and sprinkle with cinnamon, and vegan sugar if using.
4. Bake for 1 hour and 15 minutes. Enjoy!
