Tomato Tofu Avocado Salad | Peaceful Dumpling

The end of summer marks the beginning of harvest. We have plenty of tomatoes that are practically saying “Eat me.” That’s why during this period of time I like to eat them simply dressed and raw–which is the best way to enjoy the full flavor of ripe tomatoes!

Tomatoes are among the most versatile, widely available, and healthiest vegetables out there. They are an excellent source of Vitamin C, Biotin, Vitamin K, Vitamin A, and Potassium. Tomatoes also contain lycopene, an anti-oxidant that is linked to bone health, and also may reduce your risk of certain cancers including breast cancer. The tofu and the avocado add more amino acids, iron, calcium, copper, phosphorus, magnesium and potassium, fiber, and a host of vitamins.

Tomato Tofu Avocado Salad

Serves 2-3

Ingredients:

3 handfuls of iceberg lettuce

2 large tomatoes

1 avocado

1 pack of extra firm tofu

2 tbsp extra virgin olive oil

Salt and pepper, to taste

Instructions:

Wash and thoroughly dry the lettuce. Tear into bite-sized pieces. Put them into a large bowl.

Dice the tomatoes and the avocado.

Rinse tofu with water, soak it and cut it horizontally, cut vertically and then, crosswise. You’ll get perfect cubes. Combine all the ingredients together.

Sprinkle with olive oil, salt and pepper. Now, stir everything gently and you are good to go!
