The warm weather is here to stay and there couldn’t be a more perfect time to gather with friends and loved ones outdoors. Spice up your plain-Jane guacamole with this fun new twist. There’s just enough cilantro and onion to balance the richness of the avocado. And with the addition of black beans and corn, you get plenty of protein so that it can even become a light summery dinner. Also, have you noticed how guacamole takes a lot of avocados to make even just a little bowl? This genius recipe takes care of that problem, too. 🙂
Note: this mild, loaded guacamole can easily be spiced up by adding some jalapeños or serrano peppers.
The Ultimate Loaded Guacamole

Total time: 10 minutes
Yield: 6-8
Ingredients:
2 large, ripe avocados
1/2 cup red onion
1/2 bunch cilantro
1/2 bell pepper
1 can black beans
1 can corn
2 limes
salt and pepper to taste (not shown in video)
1. Chop onion, cilantro, and bell pepper.
2. Rinse and drain black beans and corn.
3. Mash avocados in a large bowl.
4. Add onion, cilantro, and bell pepper.
5. Next add black beans and corn.
6. Add lime jucie, salt, and pepper.
7. Chill for 2 hours before serving. Enjoy!
