I am perpetually cold during the winter months, which means I exchange my salads and cold cereals for hearty, warm meals. While I would rather sit in bed under a mound of blankets than actually get up and do anything, my roommate recently taught me how to make a delicious savory oatmeal that coaxes me out of bed each morning. It is made with a combination of miso paste, which contains all essential amino acids, probiotics, and boosts your immune system, and hot chili paste. It’s the perfect way to start any cold morning and can even be eaten for a hearty dinner.
Anya’s Savory Oatmeal
Serves 2
Ingredients:
1 1/2 cups rolled oats 3 cups of water 1 tbsp hot chili paste 1 tbsp yellow miso paste 1/2 block of firm tofu- cubed into 1/2″ chunks (optional) Sriracha (if desired)
Directions:
1. Place rolled oats and water and bring up to a near boil.
2. Add hot chili paste and miso paste and stir until mixture becomes thick and creamy.
3. If adding tofu, add to mixture and stir until tofu becomes warm (about 3 minutes).
4. Enjoy with a drizzle of sriracha and mug of coffee for extra warmth 🙂
