This blondie recipe was born out of my desire to incorporate baking into my culinary repertoire. And what a perfect recipe with which to start: sweet, but not too sweet, hearty, but not heavy, these blondies are a great dessert or anytime snack (for the record, my boyfriend ate all nine squares in a two-hour period). I happen to think they'd be a great accompaniment to a springtime brunch, if that's your thing. However you serve them, I hope you enjoy them as much as we have!

Directions
1. Preheat oven to 350 degrees and lightly oil an 8" square baking pan.
2. Mix together flax seeds and water and let sit for 5-10 minutes.
3. Boil two cups of water and pour over figs. Let sit for 15-20 minutes, or until the figs are soft.
3. Meanwhile, mix flour, baking powder, salt, and sugar in a bowl. In a separate bowl, mix together melted coconut oil, applesauce, milk, 1 teaspoon of the vanilla extract, and flax egg. Pour the wet ingredients into the dry and mix until fully incorporated. The consistency should be close to a pourable brownie batter; if too thick, add milk by the tablespoon.
4. In a blender or food processor, add drained figs, lemon juice, brown rice syrup, the rest of the vanilla extract, and water. Blend until the mixture has reached a thick, spreadable consistency.
5. Pour batter into baking pan. Then, gently scoop fig mixture into the center of the batter. Using a toothpick, swirl the fix mixture through the batter, making sure it reaches the sides and corners of the pan.
6. Bake for 30-35 minutes, or until the top is golden and a toothpick inserted comes out clean.
