Arugula is a superfood, the culinary history of which dates back to Ancient Rome. It was commonly consumed by the Romans due to the belief that it would bring "good luck" to the person eating it; and soon it was discovered to be natural and powerful aphrodisiac. Arugula was associated with Priapus, the Roman god of fertility, and it was popular practice to make love potions using this leafy green.

- 1 1/2 cups arugula
- 2 watermelon slices, cut into cubes
- 2 tbsp red onion, diced
- 2-3 mint sprigs, shredded
- 1 tbsp extra virgin olive oil
- 1 tbsp balsamic vinegar
- to taste salt and black pepper
Directions
Toss arugula, red onion, oil & vinegar together. Top with watermelon cubes and sprinkle shredded mint on top. Add salt & pepper to taste.
For non-vegans, feta cheese would make a great addition.
