You know those days you're really craving a loaded, deli-style sandwich with creamy spreads and gourmet ingredients? Well, now you can make that sammy at home with your favorite vegan ingredients. Roasted red pepper hummus, vegan mayo, and avocado put the club is in this simple tempeh-lettuce-tomato sandwich.

- 2 slices whole grain sourdough
- 1/3 block tempeh
- 1 tbsp soy sauce
- 1 tsp maple syrup
- 1 tsp turmeric
- to taste cayenne pepper
- 3 vine-ripe tomatoes
- 1/2 avocado
- 1 tbsp roasted red pepper hummus
- 1 tbsp vegenaise
- 2 leaves romain lettuce
- 1 tsp coconut oil
Directions
1. In a shallow tupperware container, combine soy sauce, maple syrup, turmeric, and cayenne pepper.
2. Chop tempeh into thin (1/4 inch) slices and allow them to marinade in the soy sauce mixture for about 5 minutes.
3. Chop tomatoes, avocado, and lettuce.
4. Toast bread.
5. Heat 1 tsp of coconut oil over medium heat and add the tempeh. Cook until the tempeh browns (about 2-3 minutes on each side.)
6. Allow tempeh bacon to cool then assemble sandwich. I did bottom bread, vegenaise, avocado, tempeh bacon, lettuce, tomato, roasted red pepper hummus, top bread.
