Vegan Sauce Recipes: Creamy Za'atar Dressing

October 6, 2015
Despite being vegan for over five years, I've rarely worked with cashews for creamy applications. For my foray into cooking with this versatile nut, I chose to keep things simple and a bit understated, but nonetheless delicious. The result was this dressing, which is spiced with za'atar and delicious as both a dressing and a dip. Tip: if you don't have time to sit around for three hours while the cashews soak (who does?!), soak them in boiling water for a half hour. I recommend a high speed blender for this recipe, but a regular blender will do as long as you blend thoroughly. Enjoy!

Directions

1. Soak cashews in water for at least three hours (alternatively, you may soak them in boiling water for 20-30 minutes). 2. Drain cashews and add to blender, along with lemon juice, za'atar, garlic, salt, and maple syrup. 3. Blend to combine ingredients, then slowly add water in a steady stream while the blender is running. Add more or less water depending on your preferred consistency (for a thinner dressing, add more water; if you prefer this as a dip, add less). 4. Taste and adjust seasonings if necessary.
