Last month, when my dad and I spent some time in New York, one of my favorite meals was at Mana. Described as a farm-to-table restaurant, Mana specializes in macrobiotic cuisine–my favorite! What I love about macro is that the flavors are so incredibly simple, and most meals center around beans, grains, and greens. When we arrived at the restaurant, I was very hungry, so we ordered the cauliflower and millet mash appetizer. In spite of its simplicity, or perhaps because of it, this was probably my favorite dish of the whole trip. I wanted to recreate it in my home, and the results were just as satisfying. This dish would also make a perfect Thanksgiving side 🙂
Creamy Cauliflower and Millet Mash
Ingredients
1 small head cauliflower, chopped
1 cup cooked millet, preferably toasted
1 teaspoon mellow white miso
½ cup water
1 tablespoon extra virgin olive oil
Black pepper, to taste
Directions:
1. Steam chopped cauliflower until tender and allow to cool slightly.
2. Place millet, cauliflower, and water in a food processor or high speed blender (for extra creaminess!) and process or blend until completely smooth.
3. Add miso and olive oil and continue to blend until they are fully incorporated and sprinkle with a generous amount of black pepper.
Of course, feel free to add any spices you’d like (rosemary would go especially well here). However, I love this recipe for its simplicity and wholesome goodness.
